Overview
The Cook position performs the essential duties below at the Central Kitchen. This position cooks and packs lunch for approximately 900 senior participants a day for Senior Centers, Nutrition Sites, and the Home Delivered Meal Program. The Cook performs clean up and sanitation duties on kitchen equipment and facilities in accordance with the local Health Department and HACCP Rules and Regulations.
Responsibilities
• Understands the written and verbal instructions for food preparation must be able to convert recipes to correct quantities for daily meal counts
• Slices and prepares a variety of foods items by hand with a chef's knife to include fruits, vegetables, meats, fish, poultry, and cake
• Uses an electric and manual can opener to open cans
• Operates a commercial immersion blender, commercial electric and manual can opener, industrial steamer, and conventional oven to prepare food as required for recipes
• Cooks in gas and electric ovens
• Prepares food in large roasting pans on top of the range
• Mixes, measures, and combines a variety of ingredients
• Adjusts cooking temperature and speeds and use large utensils to stir and mix
• Loads and unloads pans onto carts and into warmers that weigh up to 25 pounds
• Transfers prepared food from pans and packs correct portions in bulk quantities in standard size cafeteria pans for 4 Senior Centers, 4 nutrition Sites and the Home Delivered Meal Program
• Keeps record of temperature logs for every menu item prepared
• Cleans and sanitizes in accordance with the local Health Department and HACCP Rules and Regulations approved sanitizing solutions, such as bleach water, all surface areas of the kitchen to include workstations, tabletops, walls, floors, inside and outside of equipment
• Sanitizes pots and utensils using pot washing detergent, abrasive cleanser, degreaser products, towels, scrub brushes, steel wool pads, brooms, mops, buckets, and hoses
• Takes out trash to outside dumpster on utility carts
• Works with kitchen crew and display teamwork approach to achieve department standards of 90 or above on City/County Food Service Establishment Inspection Reports
• Follows all rules and regulations pertaining to sanitation and food safety as outlined by the State and local established rules and regulations and standards
• Records items taken out of inventory daily and assists Kitchen Lead with weekly counts of items
• Monitors taste, texture, color, and smell of food during preparation and packing process
• Reads 0 - 220'F pocket thermometer and monitor acuity of all five senses and manual dexterity
Position Type and Typical Hours of Work
• Non-Exempt - Full-Time - Monday - Friday - 8:00am - 5:00pm
• Must be available to work additional hours as needed
• Flexibility to work evenings, weekends, and holidays is a schedule requirement
• In the event of an emergency, employees are required to work to provide for the safety and well-being of the public, including the delivery and restoration of vital services

Minimum Qualifications
• High School Diploma/GED
• Two (2) years of experience
Licenses and Certifications
Required
• A valid driver's license is required; successful out-of-state candidates must be able to obtain a valid Texas driver's license within 90 days of hiring
• Subject to additional background checks in accordance with Texas Health and Human Services
Required within thirty (30) days of hire
• Food Manager's Certification
Required within six (3) months of hire
• CPR certification
• First Aid Certification

Basis of Rating
A recruitment consultant will evaluate all applications against the posted qualifications. The city may also conduct additional skill assessment tests, in addition to the panel interview
