About the Opportunity

THE POSITION
The Supervising Custodial Cook performs a variety of tasks within the food service operation of the Probation Department. This individual is responsible for the supervision, training, and evaluation of food service personnel involved in preparation, cooking, serving, and cleaning, in addition to ordering food and kitchen supplies. This position is also subject to overtime, standby, callback, shift, weekend, and holiday assignments. Performs related duties as assigned.

Unless otherwise provided, this position is part of the Classified Service of the County and is assigned to the Mid-Management/Supervisory Bargaining Unit for labor relations purposes.

Individuals who are in a full-time classification position are required to serve a twelve-month probationary period, which may be extended an additional six months, for a total of eighteen months.

Typical Tasks

• Plan, schedule, train, supervise, and evaluate the work of Food Service personnel in the preparation and serving of food and in the cleaning of kitchen equipment and facilities;
• Order, receive, check, stock, and inventory food and kitchen supplies;
• Oversee cooks and food service staff in the sanitation and upkeep of kitchen facilities and equipment;
• Prepare menus to ensure they are prepared as required;
• Ensure safety and sanitation procedures are followed in the storage, preparation, and service of food;
• Approve sick leave and vacation usage;
• Transport food stuffs, kitchen equipment, and related supplies as necessary;
• Observe tray line to assure that foods are properly portioned and arranged on trays;
• Interview and recommend appointments of new employees;
• Assist in the preparation of the departmental budget request, estimating and anticipating changes in the level of service required and new equipment needed;
• Maintain proper security procedures while youth/inmates are assigned to kitchen duties; and
• Complete and maintain all paperwork and statistics related to kitchen operations.

Minimum Qualifications (Knowledge, Skills, Abilities, Education/Experience)

KNOWLEDGE

• Principles of supervision and training;
• Health hazards, food storage procedures, sanitation, and safety practices in kitchen operations;
• Nutrition and dietetics necessary for basic menu planning;
• Kitchen maintenance and cleaning procedures; and
• Basic mathematics skills sufficient to maintain inventory records and compute food and supply costs.
  

SKILLS/ABILITIES

• Effectively train and supervise food service personnel in meal preparation, sanitation, and equipment operation;
• Prepare meals in a timely manner in accordance with nutritional requirements;
• Plan and oversee the preparation of balanced and appetizing foods on a volume and individual basis with minimum waste;
• Understand and follow oral and written directions;
• Read and apply various scales of measure and portion items accurately;
• Establish food and related supply needs, and order all food supplies as necessary;
• Calculate food costs, prepare reports, and maintain records on inventory needs, budget requests, and expenditures; and
• Operate standard kitchen equipment such as dishwasher, slicer, chopper, ovens, and grills.

EDUCATION AND EXPERIENCE

• Three (3) years experience as a cook in an institutional or commercial kitchen preparing daily meals on a large volume basis. Part of this experience must include working in a lead or supervisory capacity; AND
• Possess the required physical abilities.
• No felony convictions. Must be of good moral character and must not have been convicted of a crime for which the punishment could have been imprisonment in a Federal penitentiary or State prison.

LICENSE

• Applicants must possess and maintain a valid California Driver's License and remain free from repeated preventable accidents.

EXAMINATION PROCESS
